Chinese: Soy Sauce Chicken

(makes 3 servings)
Ingredients:
- 3 lbs chicken with skin and bones (drumsticks or thighs preferred)
- 2 tablespoons cornstarch (dissolved in ½ cup of cold water)
- Slivers of green onions for garnish
Marinade ingredients:
- 1½ cup soy sauce
- ½ cup rice wine
- ¾ cup brown sugar
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 tablespoon Chinese Five Spice mix
- 1 tablespoon ground black pepper
- ⅓ cup ginger paste (approx 3 oz)
Procedure:
- Mix marinade ingredients in a bowl (make sure the sugar is dissolved)
- Cut up chicken (if needed), add chicken to a gallon-size resealable plastic bag
- Pour marinade over chicken in bag, seal bag while pressing out excess air then rub marinade over chicken; let rest in refrigerator overnight
- Transfer chicken and marinade to a small pan, cover and bring marinade to a boil
- Turn down heat and simmer for 25 minutes
- Turn off heat and let rest for 10 minutes
- Transfer chicken to a large platter
- Thicken leftover marinade to make a sauce: boil marinade, slowly stir in cornstarch slurry until sauce thickens to your liking (you do not have to use the entire ½ cup of cornstarch slurry)
- Pour ample sauce over chicken and garnish with green onions
